THE GUAYMAS PORK BELLY TACOS

This time Guaymas Tacos presented us with a new and delicious version of their celebrated tacos: the Guaymas Pork Belly Tacos. This is a soft, savory and crunchy experience we’re sure you still haven’t tried yet.
Up to now, there’s no taco like this one. After having tried and visited hundreds of taquerias, restaurants and Mexican trailers, I haven’t run across anything like these uniquely delicious tacos.
In fact, eating a Guaymas Pork Belly Taco could become as addictive as having bacon for breakfast. I’m not exaggerating one bit. There’s no doubt that, in taco terms, these dudes fall into my 5 All-Time Faves.
Some weeks ago they invited us to visit and have a close look (not that close, actually), on how the Guaymas Pork Belly Tacos are prepared. It’s no surprise that we accepted such a generous offer, especially when it involves food. This time, we visited them at their place located on 1st Avenue, in Seattle’s Downtown, right across the Art Museum
Salvador Sahagun, owner of Taquerias Guaymas, was our host that day, showing us their latest creation. He invited us to try a sample taco (you can’t imagine how much I did enjoy this), and showed us how the magic is done in the kitchen.
For a glimpse, a drop of goodness: the Pork Belly at Guaymas is previously marinated in a homemade spice rub that includes –among many things-, herbs and spices like oregano, pepper, olive oil, sea salt, et cétera. This is for just one magnificent slab of Pork Belly. Then, all this goes directly to the oven for several minutes, just like in the picture. Deliciousness just drips out before even tasting it.
The Guaymas Pork Belly Taco comes with a generous serving of “Frijoles de la Olla,” an exquisite Nopal (cactus) Salad, green sauce, and lemon wedge. Our host invited us to down such marvelous food with an ice cold beer. It was godly enough for us to reach heaven.

This dish was born a true winner.
